Sunday Butter: Caramelized Plantain
with fluffy ricotta pancakes.
After eating and cooking thousands of meals across the globe, I have landed upon a singular truth - nothing beats bread & butter.
Butter is a blank canvas. A beautiful white space in which you may paint your strange desires, utilize wild ingredients, and work within the season.
I will share my favorite butter recipes and bread pairings every week: no measuring, no long preamble, just the best combinations. Please enjoy.
Caramelized Plantain Butter
The Elements
Blackened Plantains
Honey (we used buckwheat honey, but any will do)
Cinnamon
Butter (room temp)
Finishing Salt (to taste)
Pairing: Ricotta Pancakes
The Guide
Melt enough butter to fully cover the pan. At medium heat, add sliced plantains and cook slowly until the bottoms are GBD (Golden-Brown-Delicious). Flip the plantains and continue until both the butter and plantains are browning. Allow to cool.
Smash the plantains. Add plantains, honey, cinnamon, and salt to the tempered butter. Mix with a spoon, fork, whisk, or whatever you have in front of you.
Make pancakes. Smother in butter. Enjoy.
