After eating and cooking thousands of meals across the globe, I have landed upon a singular truth - nothing beats bread & butter. Butter is a blank canvas. A beautiful white space in which you may paint your strange desires, utilize wild ingredients, and work within the season. Every other week, I will be sharing my favorite butter recipes and bread pairings. No measuring, no long pre-amble, just the best combinations. Please enjoy.
“Wildflower Butter”
The Elements
Kombucha (any floral variety)
Honey
Butter, Unsalted (room-temp)
Flaky Salt (preferably Maldon)
Pairing: Seeded White-Grain Loaf or Sourdough Focaccia (below)
The Guide
Combine equal parts of kombucha and honey in a small sauce pot. Simmer gently until the kombucha becomes syrupy. Allow to cool. Whisk into the tempered butter. Add flaky salt just before serving. Toast the bread, add the butter, and enjoy your Sunday.
Quick Notes:
Always go for quality (no matter the style of butter, even vegan)
